Peanut Butter Chocolate Oatmeal To Go

Finding healthy foods on the go can be a challenge. This delicious oatmeal in a jar is the perfect solution. Simply put all your ingredients into a jar, screw on the cover, and throw it in your bag. You don't need to worry about it spoiling or getting squashed, crumbled, or bruised. When you are ready to dig in, you'll pour boiling water right into the jar. I personally had no idea you could make old fashioned rolled oats this way, but you can and it's just as delicious as cooking them on the stove.

Heart healthy oats make a nutritious breakfast, post-workout snack, or 3 o'clock slump remedy. Today I'm craving dessert so I added raisins, crunchy peanut butter, and chocolate but you can customize this recipe to suit your taste or mood. Add-ins could include any dried, freeze-dried, or fresh fruits, chopped or slivered nuts, brown sugar, maple syrup, honey, white chocolate, seeds, coconut oil, nut butters... the possibilities are endless.

Peanut Butter Chocolate Chip Oatmeal To Go

My slightly lighter recipe:
1/2 c old fashioned rolled oats
1 t chia seeds
1 T raisins
1 T chocolate chips
1 1/2 t chunky peanut butter
1 pinch of pure stevia extract (I use the small scoop that comes with Trader Joe's brand)
dash of salt

My husband's more decadent but crazy delicious recipe:
1/2 c old fashioned rolled oats
1 T ground flax seeds
1 1/2 T coconut oil
1 1/2 t brown sugar
1 1/2 T peanut or almond butter
1 T chopped pecans
1 heaping T chocolate chips
1 T dried cherries
dash of salt

1. Gather your ingredients. Measure and dump them into glass jar.

2. Take the jar with you. A spoon would help too.

3. When you are ready to dig in, add 1 cup of boiling water to the jar, stir, and put the cap back on. Set a timer for 5 minutes.

4. When the timer goes off, stir again and enjoy!
